Nutty Pumpkin Pudding Pie- Crock pot
1 15 oz can of pumpkin
2/3 cup evaporated milk, or 5 oz can
2 tblspn pumpkin pie spice
1/3 cup sugar
1/2 box of yellow cake mix
1 cup of pecans, or walnuts- toasted and chopped
1/4 cup butter melted

1. lightly coat sides of 3 1/2 -4 qt slow cooker with cooking spray. Then mix together pumpkin, evap. milk, sugar, 1 tablespoon of the pumpkin pie spice. Spread this mixture at the bottom of the crock pot.
2. in a med. bowl stir together prepared cake mix, nuts, and remaining amount of pumpkin pie spice. Pour/ sprinkle this mix over the layer in the crock pot. Drizzle the melted butter over it.
3. place cover on and cook on high heat for 2 1/2 hours. DO NOT KEEP OPENING LID. If you have a lift out insert for your crock pot- lift out and turn off cooker. Removing makes sure there is no burning. Then let sit with lid off for 30 minutes before serving.
Serve warm spoonfuls of this lovely dish with a dollop of whipped cream.

I am working on some crafts for the holidays as I am laid up in bed recuperating from surgery. I love to knit and crochet as I here the boys singing downstairs. It warms my heart. I am making some coin purses and eyeglass cases.

At the park enjoying a day of sunshine.
Banana Bread baking frenzy. Holy cow, I had a lot of very ripe bananas on my hands. I made 4 loaves and 36 muffins. I still had more bananas than I could use. It is delicious. Thank you trusty Bread Boys Recipe.

Happy Birthday honey! A night out with friends and drinks after. Mike and Kenneth were able to make it and I had a fabulous mango-rita.

Skoal. A toast to a new life in the sunshine state.

I can remember when Cazden was the same age Sol is now. Not anymore. Caz is a middle schooler, with a girlfriend. Time flies by.

Sol is growing up so fast. He is such a little explorer. I can't believe how fast the time has passed.
